Delicious mediterranean chicken I threw together for lunch today. Composed of two or three handfuls of chopped up onion (between a half to a whole onion), a handful of chopped up pepper (red, green, or both), a finely chopped clove of garlic, and a handful of frozen, precooked, strips of chicken (thawed and slightly prewarmed in microwave). Throw everything in a frying pan in that order (don’t prepare at all, let the onions cook while you chop the peppers, etc.); then once it’s all in, let it go for a few minutes while pouring on some white cooking wine to add some sweet flavor. I was delighted that I managed to capture some of the steam coming off of it in my picture.
